Sun-Dried Chili Peppers
Nigerian cuisine is very spicy, and chili pepper is in almost all dishes precious and vital component.
At the beginning of the dry season, northern Nigerian farmers spread barkono (small, spicy peppers) to dry under the sun everywhere around the village, making the landscape more colorful.
This practice helps concentrate peppers' flavor and preserve them for later use.
